I love this smoothie! The very sweetest of strawberries, the smooth avocado and the almost cream-like almond milk makes this taste as sinfully delicious as strawberry ice cream. And the best thing about it is that it isn’t ice cream, but is really super healthy!
This was my go to-breakfast for a very long time. Right now I’m more for oatmeal made with almond milk because it is still so terribly cold here, even though it’s March. Instead I make a smoothie bowl in the evening if I’m craving something sweet (and let’s be honest, I do that a lot). I would rather eat a healthy smoothie bowl than ice cream or candy (which I also eat a lot, let’s just be honest). And because this smoothie in my opinion tastes better than ice cream, it’s actually and easy decision to make.
This is just a basic recipe and my favorite. You can of course add whatever you like. When I had this as a breakfast smoothie bowl I would often add fresh baby spinach or green kale to get more veggies. If you like it sweet and are eating this as a desert, adding some maple syrup is just yummie.
Now, for texture.
I like this thick and ice cream-like to eat with a spoon. Then you can top it off with a little more fresh fruit, crumble or maybe some dark chocolate.
It is easy, yummie and healthy!
- About 1/4 fresh, ripe avocado
- Frozen strawberries – about 8 of them depending on size
- Almond milk
Mix frozen strawberries, avocado and almond milk in a blender. You want to add as little almond milk as possible – no more than half the amount strawberries and avocado.
Blend until the texture is smooth.
Taste – does it need more strawberries, almond milk, maybe a little maple syrup?
Put in a bowl and add your topping. Maybe more fresh strawberries, banana, granola, dark chocolate or coconut?
